Budget dinner series: Winter warmer

A real rib-sticker that will leave clean plates and big
smiles. Make double for the freezer, this will become a firm family favourite.

Pork sausage and bean casserole: R12 per person

Serves 6

1 pack of pork sausages
2 tins of 4 bean mix
2 tins whole peeled tomatoes
1 onion
2 T dried mixed herbs
4 cloves garlic
1 t garam marsala
1 small chilli (you can leave out if you wish)
1 t brown sugar
6 potatoes

Preheat the oven to 180 ºC.
Place the potatoes in to bake.
Slice the onion and finely chop the garlic and chilli.
Slice the sausages .
Sauté the onion in a casserole dish in a little vegetable oil, when it is soft,
add the garlic, garam marsala, mixed herbs and chilli.
Add the sausages and cook for 5 minutes stirring continuously.
Add the tomato tins and break them up with the side of a spoon.
Add the tins of beans, sugar and a good grinding of black pepper and a pinch of
salt.
Cover the dish with foil or the lid and place in the oven for 20 mins.
Serve with a steaming baked potato and butter when they are ready.

Cooking time: 30 mins

sausages with big black mushrooms.
