Brownies for dessert

Brownies make a brilliant base for a simple dessert, and you can ‘dress’ or mix them with whatever you have. For instance, drizzle your brownies with Bourbon or Cognac as soon as they come out of the oven, and serve with a dollop of cold, whipped cream. Easy. Here are some more ideas:

For a decadent brownie, stir together ¼ cup of flour and ¼ cup of sugar. Add 500g softened cream-cheese and mix well. Stir in 1 egg, 2 tablespoons butter, and 125ml Vodka. Mix until smooth, then spread this evenly over the chocolate brownie layer before you bake it. Drizzle with coffee-flavoured liqueur before serving.

Refrigerate your brownies and make a topping of mixed cream, rum and castor sugar, then spread this over cooled brownies. Refrigerate again and when cold, drizzle melted chocolate over the top.

Combine ½ cup semi sweet chocolate chips, ½ cup broken-up butterscotch, ¼ cup unsweetened desiccated coconut and ½ cup chopped walnuts and sprinkle over uncooked brownie batter then bake (cover with foil if it becomes too brown).

Layer cut up brownies with homemade custard or caramel sauce and ice cream and serve topped with a cherry as a Sundae that kids of all ages will love.

For a posh affair, serve brownies with Creme Anglaise, Apricot sauce or Strawberry coulis, or Brandy cream sauce.

Cover individual brownies completely with chocolate coating and decorate with Crystallised rose petals.
