3 things to do with – macaroni and cheese

Ok, so hands up who doesn’t like macaroni and cheese?

Don’t you just love it? It’s such a homely comfort dish that
brings back cosy memories of family suppers around the table and literally
licking the plate.

Now that I have my own family, I want to re-create those memories and I have some ideas to zip it up to create some fun and make the most of it.
Try these different versions.

Monster mac ‘n cheese

Take the basic recipe (this one is a winner).

Fry up a little chopped lean bacon and chopped tomato and
add it to the mixture before you bake it. It sounds too simple to be true, but
it is so yummy and adds lots of
flavour.

Veggie delight

Pan-fry some gorgeous mushrooms (you can do plain buttons or
go gourmet with black, portabellini and all sorts of others) with a little
garlic and add baby spinach.

Add to the basic recipe before you bake it.

Mac ‘n chickie

Slice a couple of chicken breasts and pan-fry with a little
garlic, steam some broccoli and add to the basic recipe.

Tip: Grill this to crisp up the top rather than bake it as
you don’t want the chicken to get tough.

And just one more…

Fancy

Roast some small blocks of butternut and pan-fry some
chopped bacon in a little vegetable oil adding a small handful of chopped sage
leaves just at the end. Stir though the mac ‘n cheese before you bake it.

If you’re a veggie, do
the same with the roasted butternut and crumble in some blue cheese.

Throw on a gorgeous little green salad and you’ve done it, gourmet-style.
