3 gorgeous tarts

3 beautiful tarts with great flavour combinations.

The French one – Mushroom and thyme

There is something très French and très chic about this tart. And yet its hearty, humble and wholesome at the same time.

Whether you use store-bought short crust pastry (totally acceptable in my books) or made it yourself (highly recommended and far less of a faff than one might think) the filling is really the heroine.

The ever-pleasing mushrooms with the creamy thyme custard filling makes for a most beguiling finish. And the added crunch of the pecan nuts? Spot on.

The happy one – Courgette, ricotta and mint

This lovely lady is fresh, fun, light and happy. Everything you need in a tart as spring approaches. Serve it as a light lunch with a chilled glass of Sauvignon Blanc and you’re golden.

The bold one – Butternut and Gorgonzola

This is the tart with attitude, boasting big, bold flavours. The silky baked butternut and gorgeously gooey Gorgonzola demand your full attention from the first bite. I like it… a lot.
