One-pot wonders are the easiest kind of cooking. You sommer gooi everything into one pot or pan and Bob’s your butterball. Plus, it means you don’t have as many dishes to wash up afterwards!

Try these recipes for an easy lunch or supper. They’re healthy and Summery too.

Simple sweet potato smoorsnoek

Smoorsnoek is an old Cape Malay classic and just another reason to be proudly South African. It’s also wheat and gluten free and wonderfully low GL. It’s a one-dish doddle to make, and tastes like the sum of its simple parts, only a whole lot of better. The kind of better that leaves you wanting to eat it for breakfast, lunch and dinner. In other words just the kind that I like, and I hope you will too. I have used healthier sweet potatoes and added in lovely fresh dill for an updated take on it.

Thai red chicken curry noodle pot

Did you hear that? All the kick-ass flavours of a beautifully fragrant Thai red curry, all in under 20 minutes, and all in one pot. Boom!

Quick Spanish chicken traybake

OlaSeñorita! This pretty little number has so much going for it. The vibrancy of colours and the deep smoky flavours of spicy chorizo and paprika is just the start. With just 10 minutes of prep time, it’s a true one-pot-wonder.
