Butternut soup recipes are still one of the most searched recipes on foodie websites. Whodathunkit?
Well I happen to think that butternut soup is one of those recipes where the old adage ‘keep it simple stupid’ is wonderfully appropriate.
This version can be whipped up in a jiffy, and has the added sweetness and lightness of the apples to lift it. And the bacon croutons? Heroic.

Then there’s this spicy butternut and chickpea soup. It tastes like the sum of its simple parts, only about 200% better!
I don’t really know what I expected from it, but I certainly didn’t’ expect to want to eat it for breakfast, lunch and dinner.
The added coconut cream adds a beautiful richness, and then the wilted baby spinach that’s stirred through just before serving lifts everything to an almost audible applause.
