A great work lunch that can be prepared ahead (meat or chicken may be added)
Naturally fermented foods are excellent providers of good bacteria. In this flamboyantly colourful salad, I’m using a local favourite, atchar, for a lively, acidic contrast. It’s flavour with benefits.
This is a superb vegetarian dish – satisfying on so many levels and best served lukewarm or at room temperature. The lentils are earthy and nutty, the goat’s milk cheese is creamy and punchy, and the vegetables are slightly charred and tender.
This colourful salad will add a wonderful vibrancy to your day!
