|2-3||cardamom — bruised to release seeds|
|1||cinnamon — stick|
|1/3||lemon grass — stick|
|1 Tbs||fresh mint|
|250 ml||water — boiled|
|lime — juice only|
First, make your ‘tea’ using the cinnamon, cardamom, lemongrass, and mint and the boiling water.
Leave to steep for 5 minutes. Then strain, add in the cool water and leave to cool completely before filling up your glass with ice, and adding in the rum, and a squeeze of lime and extra mint if you like.
