Watermelon, feta and rocket salad

Ingredients (9)

watermelon — cubed
feta cheese — cubed
Dressing (makes +- 250ml):
1 cup watermelon — chopped
lemon — halved, juice only
1 tsp honey
1/2 tsp salt
1/3 cup canola oil
freshly ground black pepper

For the dressing:
Blend the watermelon. If you prefer a ‘clear’ dressing, you can strain the watermelon juice, but I didn’t mind a bit of texture.

With the processor or blender running, add the lemon juice, seasoning and oil slowly.

Pour over the salad ingredients and serve.

For the salad:
Arrange the salad ingredients on a serving dish. Drizzle over the dressing before serving. Serve immediately.
