Vegan Banana bread millet porridge

Ingredients (11)

1/2 cup millet — uncooked
coconut milk — 1 can
2 bananas
1 tsp cinnamon — ground
1/4 cup walnuts — chopped
salt — a pinch
1 cup almond milk
1 tsp Robertson's vanilla essence
1 tbsp nut butter
1 coconut flakes — toasted
honey — for drizzling

Method:

Place the raw millet, cinnamon, salt, vanilla, maple syrup, coconut milk and almond milk into a medium size saucepan and place on a medium heat. Allow the millet to absorb the liquid while continuously stirring until the grains are soft, tender and chewy.

Remove millet from the heat and mash two ripe bananas. Stir the bananas into the millet and pour into warmed bowls.

Finish with toasted coconut flakes and pecan nuts. Add a spoonful of nut butter and a drizzle of honey (optional).
