|1/2 cup||ricotta cheese|
|1/2 tsp||vanilla extract|
|1||eggs — separated|
|1/4 tsp||baking powder|
|butter — for greasing|
Whisk the ricotta, salt, milk, vanilla extract and egg yolk together. Be sure to break the ricotta up.
Sift the flour and baking powder and then add the sugar.
Whisk the egg whites to still peaks.
Add dry ingredients to the wet ingredients, whisk to form a thick batter and then fold through the egg whites.
Heat a pan and grease with butter. Using an ice-cream scoop, scoop out a blob of batter into the pan. Fry on medium until the bubbles are seen coming to the surface, flip with a spatula and cook through on the second side. Repeat with the remaining batter.
Serve with golden syrup.
