The ideal braai-spread using McCain African Stir Fry mix to make chakalaka the hero of the table, perfect for dipping McCain Crispers into or enjoy as a flavoursome relish for boerewors, garlic rolls or creamy pap - best served sharing-style for the whole family to enjoy.

Ingredients (17)

3 tbsp oil
1 onion — chopped
1 tbsp fresh ginger — finely chopped
2 tsp fresh garlic — finely chopped
1 tbsp curry powder
1 tsp dried red chilli flakes
700 g McCain African Stir Fry
2 tins chopped tomatoes
salt — to taste
1 tbsp sugar
2 tins butter beans — drained and rinsed
1/3 cup fresh coriander — chopped, to garnish
To serve
1 packet McCain Potato Crispers — cooked according to package instructions
boerewors — braaied
mielies — braaied
garlic roosterkoek — braaied
green salad — to serve

Method:

Add oil to a heavy cast iron pan.

Add chopped onion, ginger and garlic and fry until soft and translucent.

Add curry powder and red chilli flakes.

Add the frozen McCain African Stir Fry, and let it simmer for 1 minute.

Add chopped tomatoes, salt and sugar.

Add butter beans and simmer for 5 minute.

Garnish with fresh coriander.

Serve the chakalaka as a sharing-style braai spread for the whole family to enjoy with McCain Crispers and other braai-side goodies.
