|3 tsp||cinnamon — ground|
|1/2 cup||butter — melted|
|2 tsp||cinnamon — ground|
|3/4||icing sugar — sifted|
|lemon — juice only|
|1||eggs — whites only|
Preheat the oven to 180°C and grease a muffin tray with some cooking spray.
Lay out the slices of bread and brush over the melted butter with a pastry brush.
Sprinkle over granulated sugar and a dusting of cinnamon.
Cut each bread slice into four rectangular pieces. Stack on top of each other and roll up tightly. Press each roll into the greased muffin tray and bake for 15 minutes or until golden and crispy.
Allow to cool before removing.
For the royal icing: whisk all the ingredients together until smooth and combined. The icing should be thick but pour-able.
