|2 cup||butternut — grated|
|2||eggs — beaten|
|2 Tbs||fresh coriander — chopped|
|100 g||ricotta cheese|
|pinch||salt and freshly ground black pepper|
|oil — for frying|
For the fritters:
In a mixing bowl, add eggs, salt, flour, coriander and pepper to grated butternut and mix through.
Add in ricotta and stir until combined.
Add the oil to a heated saucepan.
Using a large spoon, fry spoonfuls of the mixture until golden on each side.
For the chakalaka mayonnaise:
Mix chakalaka and mayonnaise together in a bowl and serve with the fritters.
