WATCH: How to make butternut and ricotta fritters

Ingredients (9)

2 cup butternut — grated
2 eggs — beaten
2 Tbs fresh coriander — chopped
60 g flour
100 g ricotta cheese
6 Tbs mayonnaise
2 Tbs chakalaka
pinch salt and freshly ground black pepper
oil — for frying

For the fritters:


In a mixing bowl, add eggs, salt, flour, coriander and pepper to grated butternut and mix through.


Add in ricotta and stir until combined.


Add the oil to a heated saucepan.


Using a large spoon, fry spoonfuls of the mixture until golden on each side.


For the chakalaka mayonnaise:


Mix chakalaka and mayonnaise together in a bowl and serve with the fritters.
