200 g bacon — diced
700 g McCain Skinny Fries
4 eggs — large
1/4 cup cheddar cheese — grated
sea salt and freshly ground black pepper
2 spring onion — finely sliced

Preheat oven to 200°C.

In a large cast-iron skillet, fry the bacon until crispy, then remove from the pan and drain off some of the oil. Arrange the frozen McCain Skinny Fries in a single layer on the bacon-greased skillet and bake for 20 minutes or until the McCain Skinny Fries are lightly golden.

Top with the bacon and make four wells in the hash. Crack an egg into each well and arrange the cheddar cheese around each egg. Place skillet back into the oven until the egg whites are set and they are cooked to your liking.

Season with salt and pepper according to your taste and garnish with sliced spring onions.

Note: an ovenproof pan or baking sheet can be used instead of a skillet.
