|1/4 tsp||Robertson's cream of tartar|
|salt and freshly ground black pepper — to season|
|mixed black and white sesame seeds — to sprinkle|
|hummus — optional, to serve|
|watercress — optional, to serve|
Mash half an avo then mix in the three yolks and season with a pinch of salt and pepper.
In a clean bowl, whisk the egg whites and cream of tartar until stiff peaks form.
Fold the whites into the avo mixture in three stages.
Portion 6-8 dollops of the mixture out onto a baking sheet lined with baking paper. Sprinkle with the sesame seeds.
Bake at 160⁰C for about 30 minutes, or until golden.
Serve with hummus, some avo slices and fresh watercress.
