|500 g||pork fillet — cut into chunky cubes|
|1 cup||smooth apricot jam — melted|
|3 tbsp||soy sauce|
|1 tbsp||lemon juice|
|1 tbsp||olive oil|
|1 tsp||fresh garlic — minced|
|1 pinch||dried red chilli flakes|
|1||red onion — cut into chunky cubes|
|dried apricots — 2 per skewer|
|salt and black pepper — to season|
Heat the apricot jam in a microwave to melt.
Stir in soy sauce, lemon juice, olive oil, minced garlic and red chilli flakes.
Place 1/2 apricot mixture in a large zip-top plastic bag; reserve the remaining apricot glaze for basting.
Add pork chunks to the bag, and seal. Marinate at room temperature for 30 minutes. Remove pork from bag, and discard marinade.
Thread pork evenly onto skewers along with red onion chunks and dried apricots. Season skewers with salt and black pepper.
Cook over a hot griddle or braai over hot coals for about 2 minutes each side or until fully cooked, remember to baste with the remaining apricot mixture as you go.
Serving suggestion: tzatziki, fresh green slaw and toasted naan breads.
