Warm quinoa porridge with coconut milk
A high protein and low GI grain porridge.
|1 cup||coconut milk|
|1 tsp||cinnamon — ground|
|1 tsp||vanilla — extract|
|5||almonds — crushed|
|almonds — handful, flaked|
|2||strawberries — sliced (topping)|
|syrup — maple|
Place 2 cups water in a large cooking pot and bring to the boil. Add quinoa grain and allow to boil for 10 minutes on high heat. You will know that the quinoa is cooked when it expands and develops a white ring around each grain. Allow to boil further on lower heat until water is fully evaporated.
Once quinoa is fully cooked and water has evaporated remove from heat. Add coconut milk, vanilla extract, cinnamon and natural sweetener. Stir thoroughly and return to low heat for 3 minutes.
Remove from heat. Stack with pecans, almonds, cacao nibs, and strawberries. Drizzle with maple syrup to taste. Serve hot.
