Warm mango compote with basil and vanilla ice cream
|1.00||vanilla — pod, split or essence|
|30.00 ml||butter — unsalted|
|6.00||fresh basil — chopped|
|0.00||ice cream — vanilla, to serve|
Scrape the seeds from the vanilla pod into the sugar and mix well.
Mix sugar with water in a saucepan.
Bring to the boil, add the vanilla pod or vanilla essence and simmer for 10 minutes.
Remove the vanilla pod.
Peel the mangoes and cut the fruit into 5 mm slices.
Add the mango slices and a pinch of salt to the syrup and simmer for two minutes, just enough to warm the fruit and not to cook it through.
Remove from the heat and gently stir in the butter and the basil.
Serve immediately with scoops of vanilla ice cream.
