Grease an ovenproof dish.
Arrange half the toamto slices on the base of the dish and top with the sliced courgettes and drained mushrooms.
Place the remaining tomato slices on top and season to tste.
To make the topping, mix the feta and breadcrumbs and rub in the butter.
Stir in the thyme and freshly ground black pepper to taste.
Spread the topping evenly over the vegetables and press down.
Bake in a preheated 180 °C oven for about 30 minutes until the topping is golden.
