Vegetarian Sloppy Joes with a touch of cheese

Ingredients (12)

1 onion — chopped
1 green pepper — deseeded and chopped
1 tsp garlic — paste
1 tomatoes — chopped
1/2 cup corn kernels — frozen or tinned
1/2 cup baked beans
1 tsp sunflower oil
1 tsp white vinegar
1 tsp brown sugar
1 tsp mustard sauce
4 cheese — sliced
4 hamburger buns

Method:

Place a saucepan on medium heat with sunflower oil. Add the chopped onion and green pepper, as well as the garlic paste.

Cook on a low heat for 5 – 6 minutes. Add ground pepper and salt to taste. Add the chopped tin tomatoes and simmer until the sauce thickens.

Stir in the vinegar, brown sugar and mustard sauce. Add the corn kernels and beans to the sauce. Take the sauce off the heat and set aside.

Place the bottom parts of the buns on a plate and divide the Sloppy Joe sauce between the 4 buns.

Top with a slice of cheese and place the bun tops on the side.
