Vegan’s Breakfast bonanza
|3.00||cannellini beans — tinned, drained and rinsed|
|1.00||garlic — large cloves|
|1.00||onion — small, thinly sliced|
|2.00||red chilli — split|
|15.00 ml||tomato paste|
|1.00||tinned tomatoes — chopped|
|10.00 ml||vinegar — balsamic|
|6.00||black mushrooms — sliced|
|30.00 ml||fresh chillies — 573|
|0.00||salt and freshly ground black pepper|
Preheat oven to 200°C.
Place all the ingredients except the fresh tomatoes in a baking dish, season well and bake for 20 to 25 minutes.
Toss in tomatoes and bake until just beginning to burst, about five minutes.
Serve with toast.
