Vegan date and nut muffins
|2 1/2 cup||flour|
|1 cup||coconut sugar|
|1 tbsp||Robertson's baking powder|
|1 tbsp||ground cinnamon|
|1 cup||dates — diced|
|1 cup||pecan nuts — diced|
|1/2 cup||vegetable oil|
|2 cup||plant-based milk|
|1 tbsp||Robertson's vanilla essence|
Add the dry ingredients to a medium-sized mixing bowl. In another bowl, mix together the wet ingredients.
Add the wet ingredients to the dry ingredients and stir until a smooth batter is formed.
Spoon the mixture into a greased muffin tray. Bake in a preheated oven at 180°C for 20-30 minutes or until a knife inserted into the centre of a cupcake comes out clean.
