Vegan date and nut muffins

Ingredients (11)

2 1/2 cup flour
1 cup oats
1 cup coconut sugar
1 tbsp Robertson's baking powder
pinch salt
1 tbsp ground cinnamon
1 cup dates — diced
1 cup pecan nuts — diced
1/2 cup vegetable oil
2 cup plant-based milk
1 tbsp Robertson's vanilla essence

Method:

Add the dry ingredients to a medium-sized mixing bowl. In another bowl, mix together the wet ingredients.

Add the wet ingredients to the dry ingredients and stir until a smooth batter is formed.

Spoon the mixture into a greased muffin tray. Bake in a preheated oven at 180°C for 20-30 minutes or until a knife inserted into the centre of a cupcake comes out clean.
