20.00 ml butter
50.00 ml sugar
3.00 eggs — jumbo, separated
140.00 g flour — cake
3.00 ml salt
500.00 ml milk — full cream
250.00 ml orange juice — freshly squeezed
15.00 ml orange — zest only
5.00 ml cinnamon — ground
30.00 ml butter
15.00 ml honey
30.00 ml van der hum liqueur

Grease a 30 cm pie dish or six to eight individual ramekins.
Cream the butter and sugar until light.
Add the egg yolks one by one and mix well after each addition.
Sift the cake flour and salt and add to the mixture. Mix well.
Slowly add the milk and juice while continuing to mix well.
Whisk the egg whites until stiff and fold into the mixture.
Spoon into the dish or ramekins and bake for 30 to 45 minutes until set.
Remove from the oven and set aside.
To make the sauce, put all the ingredients in a saucepan and heat over a low heat until melted.
Spoon over the tart.
Serve the pudding hot or cold with whipped cream.
