Ingredients (5)

2 mediterranean cucumber
500 g Greek yoghurt
25 ml olive oil — extra virgin
4 garlic cloves — crushed
fresh mint — finely sliced

Peel the cucumbers and remove the seeds. Finely dice the cucumber and mix with the rest of the ingredients. Leave to stand for 30 minutes to allow the flavours to develop.
