|1 Tbs||sugar — or honey or xylitol|
|40 ml||fresh lime juice|
|ice — cubes|

Peel and de-stone one ripe nectarine, cut into cubes and add to a small pot along with the remaining syrup ingredients.
Bring to a bubble, remove from the heat, take out the thyme sprig and blend until smooth, then leave to cool.
Add the tequila, cointreau, lime juice and a handful of ice cubes to your cocktail shaker (or a deep jug), mix well.
Dampen the rim of your Martini glasses with water, dip in salt, add your lime wedge to the rim of your glass and pour in the cocktail mixture.
