Sweetly refreshing mango sorbet

Ingredients (4)

500 g mango — puréed
castor sugar
1 eggs — whites only
lemon juice

Place the mango, sugar and egg white in a bowl and beat for 10 minutes.

Taste, then add the lemon juice if using, and beat.

Tip the mixture into a pre-chilled plastic container, smooth over the surface and replace the lid.
Freeze overnight or until frozen.
