|2 cloves||garlic — cloves, minced|
|1||onion — cut into rings|
|2 cup||mushrooms — chopped|
|2||sweet potatoes — chopped, roasted|
|salt and freshly ground black pepper — to taste|
|fresh parsley — handful, chopped|
|1 cup||grated mature cheddar|
|1/2 cup||sour cream — to serve|
Roast the sweet potatoes.
Heat the butter in a saucepan and saute the onion, garlic and mushrooms until soft.
Add the sweet potatoes and mix through. Add seasoning and herbs and mix through.
Serve with mature cheddar, sour cream and egg. (optional)
