|oil — for deep frying|
Slice sweet potatoes thinly (if you have a food processor, the whole process will be over in seconds).
Heat oil in a large, heavy-based pan or wok and fry sweet potato slices in batches. Remove from oil, drain on a paper towel and salt immediately.
Place in a low oven or warming drawer to keep warm until all potatoes have been cooked.
Serve immediately, on their own or with a fiery salsa.
