Place cubes of potato on a baking tray. Drizzle with oil, cover with aluminium foil and roast at 220 ºC for 20 minutes, or until soft.
Place in a food processor along with remaining ingredients and blend until smooth. Serve with natchos, melba toast or slices of French bread.
