Sweet pap with stewed fruit

Ingredients (14)

stewed fruit
mixed dried fruit
500 ml rooibos — strong tea
1 cinnamon — stick
30 ml honey
lemon — juice only
pap
375 ml maize meal
2,5 ml salt
30 ml butter
60 ml buttermilk
to serve — to serve
125 ml buttermilk
30 ml sugar — dark brown

Method:

1. Stewed fruit: Put the dried fruit
in a glass bowl and cover with the rooibos tea. Leave overnight to soak and rehydrate.

2. Put the
fruit, cinnamon, honey and lemon juice in a saucepan or pot and simmer over
medium heat for 15-20 minutes or until the fruit is soft.

3. Pap: Use
the mealie meal and salt to make the pap according to packet instructions. Stir
in the butter and amasi.

4. To serve: Spoon the pap into
individual bowls and put the stewed fruit on top. Pour a little amasi over each
and sprinkle brown sugar on top. Serve hot.
