Easter breakfast fit for royalty - French toast fingers dipped in a vanilla yoghurt and mango coulis duo!

Ingredients (10)

French toast fingers
8 slices fresh white bread — crusts removed and cut into fingers
1 egg
1/2 cup milk
1 dash vanilla essence
butter — for frying
1/2 cup castor sugar
4 hollow easter eggs
vanilla yoghurt
mango coulis
speckled eggs — crushed, to garnish

Method:

Yoghurt dip

Gently remove the tops off each hollow chocolate egg.

Fill each with vanilla yoghurt and top with a large teaspoon of mango coulis.

Set aside.

French toast fingers

Lightly whisk the egg, milk together and a dash of vanilla essence together.

Dip each bread finger into the egg mixture and then fry butter on each side until nicely golden.

Dust each finger in castor sugar and serve immediately alongside the prepared yoghurt and mango coulis dips.

Sprinkle with crushed speckled eggs and enjoy!

Notes

You can dust the French toast fingers with cinnamon sugar for a lightly spiced twist.

You can use lemon curd or granadilla coulis instead of the mango coulis.
