Sweet chilli pork and noodles

Ingredients (10)

600 g pork — fillet, sliced
oil — for frying
2 garlic — cloves
5 cm fresh ginger — peeled and grated
1/2 cup sweet chilli sauce
5 g fresh mint
200 g noodles — rice
5 g fresh mint
5 g fresh coriander
sesame oil — for drizzling

Place the pork in a bowl and season well.

Heat oil in a pan, add pork. Sauté until golden brown. Remove, set aside.

Place garlic and ginger in the pan, sauté until golden. Add sweet chilli sauce and ¼ cup water, return the pork to pan, cook for 5 minutes or until cooked through. Remove from heat. Toss in mint and set aside.

For the noodles:
Place noodles in a bowl, cover with hot water for 5 minutes, drain. Toss through with mint and coriander; drizzle with sesame oil.

To serve:
Serve the sliced pork on a bed of noodles.
