Ingredients (12)

2.00 onion — chopped
1.00 garlic — cloves, crushed
15.00 ml fresh chillies — 573
350.00 g baby potatoes — peeled, halved
200.00 g leeks — sliced
1.00 Litres stock — chicken
250.00 g pasta — of your choice
125.00 g green beans
1.00 spinach — chopped
salt and freshly ground black pepper
400.00 g chicken — cooked, diced
60.00 ml pesto — and parmesan cheese shavings, to serve

In a large pan, sauté onions and garlic in heated oil until onions are transparent.
Add potatoes, leeks and chicken stock. Simmer for 15 minutes, then add pasta, beans, spinach, salt and pepper. Cook until pasta is al dente.
Add chicken and heat through. Ladle soup into bowls.
Serve with a dollop of pesto and garnish with Parmesan shavings.
