Comfort food in a bowl made from fruit and sugar-free products.
|1 cup||bananas — chopped|
|1 cup||berries — frozen|
|1/4 cup||dates — finely chopped|
|2 tsp||vanilla — essence|
|1/2 cup||milk — powder|
|1/4 cup||oats — rolled|
|1/4 cup||desiccated coconut|
|2||flour — cake|
|45 g||butter — room temperature|
|cream — whipped and mint leaves, to garnish|
Pre-heat the oven to 180°C.
For the fruit layer, mash the bananas with a fork. Combine with the berries, date and vanilla. Place it in an ovenproof dish.
For the crumble mixture, stir the milk powder, oats, coconut, flour and sesame seeds together. Use your fingers to rub the butter into the dry mixture. Keep it slightly lumpy. Sprinkle this mixture over the fruit and bake for 45 minutes until the top is golden.
Serve warm with whipped cream and garnish with mint, if you prefer.
The berries can be replaced with peaches or apples to make different fruit crumbles.
