Strawberry flapjacks with maple syrup

Ingredients (10)

2 cup flour
2 tsp Robertson's baking powder
1 pinch salt
2 eggs — beaten
3 cup water
lemon — juice
300 g strawberries — finely chopped
strawberries — to garnish
cream — whipped, to serve
maple syrup — to serve

Method:

In a mixing bowl, add all the dry ingredients and mix through. Then add all the wet ingredients and beat well, until incorporated.
Add the chopped strawberries to the batter.

In a nonstick pan, add scoop fulls of batter to the pan and allow to cook until bubbly. Turn the flapjack over and allow to cook through on the other side as well.

Serve with fresh strawberries, whipped cream and maple syrup.
