|375 g||pork sausages|
|400 g||potatoes — parboiled|
|1||red onion — cut into wedges|
|fresh chillies — 573|
|30 ml||vinegar — balsamic|
|250 g||button mushrooms|
|3||tomatoes — wedges|
|sea salt and freshly ground black pepper|
Preheat oven to 180ºC.
Place sausages, thyme, onion and new potatoes into a roasting pan, drizzle with oil and roast for 15 minutes.
Add remaining ingredients, season and roast for 10 – 15 minutes until cooked.
Garnish with fresh herbs and serve immediately.
