Debone the meat and splay it.
Mix all the ingredients for the marinade and pour into a shallow baking dish. Add the meat and marinate for 8 to 12 hours, turning occasionally.
Roast the lamb over glowing coals for 30 to 40 minutes, until tender and juicy, frequently basting it with the remaining marinade.
Serve the meat while still slightly pink on the outside. Do not overdo, or you will dry out the meat.
