Ingredients (15)

30.00 ml fresh chillies — 573
3.00 onion — chopped
6.00 garlic — cloves, chopped
2.00 red chillies — chopped
4.00 tinned tomatoes — chopped
500.00 ml tomato purée
30.00 ml sugar
500.00 ml fresh Italian parsley — chopped
0.00 sea salt and freshly ground black pepper
750.00 ml tomato sauce — spicy
1.00 ciabatta — toasted or stale, cubed
0.00 sea salt and freshly ground black pepper
0.00 fresh basil
0.00 parmesan — shavings
0.00 olive oil — extra virgin, to drizzle

Heat the oil in a large pot and add the onions, garlic and chilli.
Gently fry until onions are transparent and then add the tins of chopped tomatoes as well as the purée.
Sprinkle the sugar over the mixture (do not stir through) and leave to simmer for 10 minutes. Add the parsley and season.
Divide sauce in two. Store half in a plastic container in the freezer and use the other half to make TOMATO BREAD SOUP:
Heat the spicy tomato sauce and add the cubed ciabatta and stir through.TIP: The spicy sauce is also great over pasta.
