Spicy roasted caulifower in lettuce cups

Ingredients (15)

1/3 cup vegetable oil
1 tsp turmeric
1/2 tsp curry powder
1 tsp cinnamon — ground
1 Tbs coriander — seeds
1 tsp mustard — seeds
dried chilli flakes — pinch
sea salt and freshly ground black pepper
1 head cauliflower, broken into small florets — large
1 red onion — cut into small wedges
1/2 cup sultanas — soaked in a bowl of hot water, then drained.
1 lettuce — iceberg
1/4 cup yoghurt — plain
25 g coconut — fresh, toasted
fresh coriander — to garnish

Preheat oven to 210ºC.

Place oil, turmeric, curry powder, cinnamon, coriander seeds, mustard seeds and chilli flakes in a bowl. Season, mix well to combine, add cauliflower florets and onion wedges and stir well to coat.

Place on an oven tray, roast for 15 minutes, or until crispy and cooked.
Remove from oven, stir through sultanas, allow to cool slightly.

To serve: Place 2 tablespoonfuls of mixture into lettuce cups, top with a little yoghurt and sprinkle with coconut and coriander leaves.
