Spicy meatball and fruity rice

Stuffed with fruity flavour, this meatball recipe can satisfy any hunger.

Ingredients (20)

1 onion — small, finely chopped
2 garlic — cloves, crushed
500 g mince — lamb or beef
5 ml cinnamon — ground
7.5 ml coriander — ground
7.5 cumin — ground
10 ml paprika
50 g almonds — ground
60 ml fresh mint — chopped
1 eggs — extra-large
lemon — halved, juice only
salt and freshly ground black pepper — to taste
Fruity rice:
30 ml oil
30 ml butter
2 spring onions — chopped
3 celery — chopped
100 g dates — chopped
60 g almonds — chopped
3 x 250 ml basmati rice — cooked
60 ml fresh coriander — chopped

Method:

Place all the above ingredients in a bowl and mix until well combined. 

Roll into small meatballs.  Push 3 onto a skewer. 

Fry in a pan over medium heat until golden and cooked through.

For the rice:

Heat the oil and butter and fry the spring onions and celery briefly. 

Add dates, almonds, rice and coriander. 

Heat through. 

Serve with the meatball kebabs.
