|2||tomatoes — diced|
|1/2||onion — small, chopped|
|1/2||green pepper — diced|
|1||garlic — cloves, finely chopped|
|dried chilli flakes — pinch|
|2 tsp||lime juice|
|fresh coriander — small bunch, chopped|
|1/2 tsp||dried thyme|
|1/2 tsp||garlic — powder|
|1 tsp||cumin — ground|
|freshly ground black pepper|
|3||chicken breast fillets|
|olive oil — for drizzling|
|4||tortilla wraps — large, soft|
Combine all of the salsa ingredients in a bowl. Mix well, cover and refrigerate.
Combine the paprika, thyme, garlic powder and cumin in a bowl with a good grinding of salt and pepper.
Slice the chicken breast fillets in half lengthways and drizzle with olive oil. Rub the spice mix into the chicken.
Fry the chicken over a medium heat until cooked through. Slice diagonally. Give the salsa a good stir and drain any excess liquid.
Heat the wraps in a dry frying pan for a few seconds on each side. Place a small amount of lettuce on each wrap and top with chicken slices, salsa and a good dollop of sour cream.
Fold the bottom of the wrap up, fold the sides in, then roll it from the bottom up so that the filling completely enclosed. Enjoy immediately.
