10.00 ml sea salt
5.00 ml dried oregano
2.00 ml fresh rosemary — finely chopped
5.00 ml fresh thyme — chopped
5.00 ml caraway seeds
5.00 ml tomato purée
5.00 ml castor sugar
2.00 ml cumin — ground
2.00 ml turmeric
10.00 ml chilli paste
1.00 garlic — cloves, crushed
2.00 ml black pepper — freshly ground
1.00 kg chicken breast fillets — deboned
250.00 g bacon — streaky

Mix all the ingredients for the spicy rub. Make three incisions in each chicken breast. Rub the spicy mixture onto the chicken and into the incisions. Cover and chill for 30 minutes. Preheat the oven to 180 ºC. Wrap the chicken breasts in the bacon rashers and secure with cocktail sticks. Arrange the chicken breasts on a baking sheet and bake until the breasts are done and the bacon is crispy, about 20 minutes. Serve with baby potatoes and vegetables.
