When it's granadilla season, you've got to make up a batch granadilla compote and enjoy this fresh and spicy sangria.

Ingredients (11)

For the spiced granadilla compote
8 granadillas — pulp removed and reserved
1 cinnamon stick
2 star anise
For the sangria
60 ml spiced granadilla compote
1 pineapple — peeled and cut into triangles
250 ml soda water
500 ml alcohol-free sparkling wine
Serving suggestion
ice
fresh mint
cinnamon sticks
star anise

Method:

To make the spiced granadilla compote

Place all ingredients into a small pot and cook for 5 minutes on high.  Then turn heat down to low and simmer for 15 minutes.  Allow to cool.

To assemble the sangria

Place ice, pineapple pieces, spiced granadilla compote, cinnamon quills and star anise into a large jug.  Pour over sparkling water and alcohol-free sparkling wine.  Serve cold and enjoy!
