Spiced cauliflower salad

Ingredients (14)

1 cauliflower — head, quartered and sliced
1/4 tsp paprika
1/4 tsp cinnamon — ground
1/4 tsp turmeric
cayenne pepper — pinch
salt — pinch
lettuce — butter, small head
fresh coriander — small handful
80 g sugar snap peas
1 avocado
20 g pine nuts
1/2 red onion — sliced
1/2 lemon
balsamic reduction — drizzle

Preheat the oven to 200ºC.

Place the cauliflower into a baking dish, drizzle over olive oil and sprinkle over spices and salt and toss to coat.

Roast for 20-25 minutes or until just softening, but still with a bite.

Allow to cool.

Arrange the lettuce around a large serving dish and top with the other ingredients.

Dress and serve.
