Spiced cauliflower salad

Perfect for the beginnings of Autumn.

|1||cauliflower — head, quartered and sliced|
|1/4 tsp||cinnamon — ground|
|cayenne pepper — pinch|
|salt — pinch|
|lettuce — butter, small head|
|fresh coriander — small handful|
|80 g||sugar snap peas|
|20 g||pine nuts|
|1/2||red onion — sliced|
|balsamic reduction — drizzle|
Tap for ingredients
Preheat the oven to 200ºC.
Place the cauliflower into a baking dish, drizzle over olive oil and sprinkle over spices and salt and toss to coat.
Roast for 20-25 minutes or until just softening, but still with a bite.
Allow to cool.
Arrange the lettuce around a large serving dish and top with the other ingredients.
Dress and serve.
