Preheat the oven to 180 ºC (350 ºF).
Rinse the chicken and cut it open along the breastbone. Press firmly with the palm of your hand to flatten it. Season well with salt and pepper. Place in an oven pan, skin side up.
Mix the remaining ingredients and brush the chicken with the mixture. Bake for about 60 minutes or until the chicken is done and tender. Brush with the sauce from time to time.
Serve with baked potatoes and a green salad.
