Ingredients (7)

For the vanilla syrup
1/2 cup white sugar
1/2 cup cold water
1 tsp vanilla extract
For the cocktail
60 ml basic sugar syrup (see recipe) — as above
30 ml brandy
100 ml Leopard's Leap Sparkling Chardonnay Pinot Noir
fresh lemon — sliced

Method:

Method – vanilla simple syrup

Add water and sugar to a small saucepan over medium heat.

Stir until sugar is dissolved. Let cool, then stir in the vanilla extract.

Strain into a jar or bottle and seal tightly with a lid.

Method – cocktail

Pour brandy and vanilla simple syrup into a chilled champagne flute.

Fill to the top with the sparkling wine.

Squeeze lemon juice into glass and drop in rind.
