Sauté; the onion in a pan and add the sausage slices. Stir-fry until the sausage is lightly browned.
Add the tomato, green beans, peas and potato.
Season the eggs with salt and pepper and add the parsley. Pour over the vegetables in the pan, reduce the heat and cook until the egg has set. Slice and serve hot.
