Spaghetti with broccoli and avocado
|2 cup||pasta — cooked spaghetti|
|2 cup||broccoli — cut into florets|
|2 Tbs||soy sauce|
|salt and freshly ground black pepper — to taste|
|1||avocado — peeled|
|parmesan cheese — slices to serve|
|micro greens — to garnish|
In a wok, heat the butter and add the broccoli florets, stir frying it until tender. Add the soy sauce and saute for another few minutes.
Toss the spaghetti with the stir fried broccoli and serve with avocado, Parmesan and greens.
Add grilled chicken breasts to the mix if you need to bulk it up with meat for the cavemen, and drizzle a bit of balsamic reduction in there for extra indulgence. The avocado gives a creaminess to the dish, complimented by tender broccoli and perfectly cooked spaghetti. Vegetarian’s dream!
