Smoked salmon with buttermilk pancakes

Ingredients (9)

250 ml flour — cake
5 ml Bicarbonate of soda
1 eggs
45 g butter — melted
375 ml Buttermilk
200 g salmon — Norwegian, smoked and sliced
cream cheese — flavoured
30 ml fish — red roe
freshly ground black pepper — to serve

Mix flour and bicarbonate of soda in a bowl. In another bowl, whisk together egg, butter and buttermilk. Add to flour and whisk until smooth. Pour a spoonful of mixture at a time into a greased, heated frying pan over medium heat and cook for one minute on each side, or until golden.
Serve topped with salmon, cream cheese, roe and pepper.

Serves 4-6.
